How to Make It

Toast the pine nuts

Dry pan, medium heat, 3 minutes until golden. Watch constantly — they burn in seconds. Cool before using.

Make lemon dressing

Whisk lemon juice, zest, garlic, olive oil, and salt. Taste — it should be bright and bold.

Assemble loosely

Spread rocket on platter. Scatter pine nuts and basil. Shave Parmesan directly over top with a vegetable peeler.
